
Ingredients:
2 skinless thin chicken breast fillets
2 tbsp olive oil
1 shallot, finely chopped
4 garlic cloves, finely chopped
1 tsp paprika
juice of 1 lemon
2 tbsp chopped coriander leaves
salt and pepper to taste
Method:
Slice the chicken fillets into thin strips.
Heat oil in a large frying pan, add in the chicken, shallots, garlic and paprika. fry over a high heat for about 4-5 minutes until cooked through.
Add the lemon juice and coriander and season with salt and pepper.
Serve hot with lemon wedges, garnished with coriander.
