Vegetable Vermicelli Pulao



Ingredients:

1/2 cup vermicelli
1 large onion, chopped
1 tsp ginger garlic paste
1/2 cup vegetables of your choice
2 tsp lemon juice
few fried cashews
cooking oil
2 tsp curry powder / pulao masala
salt to taste
1 1/4 cup water, approx
chopped corriander

Method:

Fry the vermicelli in a tsp of oil until golden brown. set aside.
Heat oil in a pan, add ginger garlic paste and saute for 1-2 minutes. Add in the onions and vegetables, saute for 2-3 minutes.
Now add curry powder, lemon juice, salt and water, bring to boil.
Add fried vermicelli and cashewnuts and cook for 8-10 minutes.
Garnish with corriander leaves and serve.
