Stuffed Brinjal Gravy

later this day, i was browsing through my draft and came across a few recipes that haven't been published for a very long time.I was quite busy and couldn't contribute time for the blog.so decided to make some changes in the blog design which almost took all my time, adding and deleting each and every blogging stuff available. you could notice , still the blog is incomplete. Iam working on it and hopefully it should be done in couple of days.
Now to the recipe:
This is an andhra style brinjal gravy, made with rich spices.
Ingredients:
5-6 brinjals
1 cup shallots, chopped
1 tsp cumin seeds
3 tbs sesame seeds
2 tbs peanuts
small piece of ginger
2 cloves garlic
2" cinnamon stick
4 nos dry red chilli
3 tsp coriander seeds
1 tbs grated coconut
1 tbs tamarind paste
¼ tsp turmeric powder
2 tsp red chilli powder
¼ tsp mustard seeds
¼ tsp cumin seeds
few curry leaves
salt to taste
4 tbs sesame oil
Method:
Dry roast peanuts,sesame seeds,coconut,coriander seeds and red chillies.
Grind them along with shallots, ginger, garlic, cinnamon, cloves and cumin seeds to a thick paste.
Wash and slit the brinjals halfway through and stuff them with the ground paste, remaining paste can be used in the gravy.
Heat oil in a pan and add mustard, cumin and curry leaves, let them splutter.
Add the paste along with turmeric powder, red chilli powder, tamarind paste and salt. Add water make it into a gravy consistency.
Add the brinjals to the gravy and cook over medium flame with lid on for 10 minutes, till brinjal is cooked and oil seperates on top.
Garnish with coriander leaves and serve hot with rice or roti.
