Don't get confused with the name !
Last Wednesday was Sanshu's 3rd B'day. We arranged a party at home for our close friends and i got to prepare few dishes and the rest was ordered outside.The party went well .The best & worst thing was, there was lot of leftovers from the party . Best - no cooking for almost 2 days, worst- eating the same dishes for 2 days. There was so much remaining, even we din't feel throwing away.After almost 2 days , the craving for a fresh homecooked meal was very strong . Other than chicken & tomato, there was no other vegetables in the fridge. so i came up with a idea of making an simple tomato rice with chicken in it. So the name...
Now to the recipe,
You Need:
2 large chicken breasts, cut into small pieces
4 large tomatoes, chopped
1 large onion, thinly sliced
2 green chillies, slit
2 tbsp ginger garlic paste
1/4 cup chopped coriander leaves
1/4 cup chopped mint leaves
1/2 cup moong sprouts [ optional ]
1 tsp turmeric powder
2 tsp coriander powder
2 tsp chili powder
2 bay leaves
3 cardamom pods
3 cloves
a small piece of cinnamon stick
1/4 cup yogurt, lightly beaten
2 cups basmati rice
3 cups water
2 tbs ghee
1 tbs olive oil
salt to taste
Method:
Wash and soak the rice in water for alteast 1/2 hour.
Heat oil & ghee in a pan, add cardamom,cinnamon,cloves &
bayleaves. saute for a minute.
Add the green chillies & onions and saute till the onions
turn translucent.
Add in the ginger garlic paste and saute for 2 minutes.
Now add the tomatoes and mash with the back of your spoon,
till they become mushy .
Add in all the spice powders and mix well.
Add the chicken pieces along with coriander & mint leaves and
saute for 3-4 minutes.
Add in rice, salt & yogurt. Mix well, check for salt and cook
in a rice cooker.
Garnish with Mint and serve with raita or your choice of
curry.
Note:
If using a pressure cooker, allow 2 hisses and turn off.
